Pickling

The pickling department has been outfitted with state-of-the-art equipment. Pickling brines are prepared in separate rooms, maintaining the highest qualitative standards. The capacity necessary to guarantee our customers regular supplies of tasty, consistent quality products is achieved by using several injection devices and a set of 20 vacuum tumblers with a capacity of 3 T each. In these machines 120 T meat products per day can be pickled in controlled conditions.

The pickling process is constantly monitored. The process takes place in controlled temperatures and samples of each batch are tested in the in-house laboratory.
